Cookie Dough Cookies are a whole new way of eating cookies! Imagine two delicious cookies with cookie dough in the middle. Where did this idea come
from? Well, for ten years I was a nanny, and being a nanny for that long means baking an awful lot of cookies. I often had to stop the kids from eating raw dough because of the fears about raw eggs, even though raw cookie dough is totally delicious. Then it occurred to me that pasteurized eggs are safe to eat raw, and they could be used in cookie dough to make it safe to eat. And what better way to eat that raw dough than in the middle of a cookie sandwich? I also realized that mixing and matching flavors, like, say, peanut butter cookies with raw chocolate chip dough could make for a truly original cookie treat! After some recipe experimentation (and perhaps the addition of a secret ingredient or two) Cookie Dough Cookies were ready for the world to discover and devour....

So far, I have four flavors for Cookie Dough Cookies:

- Chocolate chip cookies with peanut butter dough (the most popular)

- Chocolate chip cookies with chocolate chip dough

- Peanut butter cookies with chocolate chip dough

- Peanut butter cookies with peanut butter dough


(I use semi sweet chips for the cookies, and I have avoided adding nuts to the chocolate chip cookies, but if people ask for them, I can always start.)
